Spray or French Polish restoration?

For a 1924 upright Grotrian Steinweg. One end panel needs to be stripped and repolished and the top and the other end taken back a way. A fair bit of work is needed but the panels above and below the desk are pretty good only surface crazing.

how does the spray finish compare to the French Polish for looks and for other factors? I was told it loses its patina.
But a lot of shops are getting them sprayed due to cost.
The costs are about the same for this one. 600 ish

A lot of FPs spray the piano first and finsh with a rubber

Some of the modern finishes are very good if done well and some can look like the surface of an orange
