Have you tried to search in youtube if there is a tutorial video or somewhere like metacafe or a website/forum where some of the users uploading their work.

That is great that is enjoying what she's doing, let her continue to play by ear if she like to explore more on piano. If you feel that she is ready to have a sheet then ask her if she wants to play it.

When I was starting to learn piano I never used any books, I only search here in the internet. You will find many articles about piano tutorials in the internet and some of them is also sharing some chords where you can play the basics.
